Orange CHicken Tabbouli (sort of)
before I went grocery shopping wednesday night I looked through the New Dieter's Cookbook (a very nice book with pictures of everything in it) for recipe ideas. It suggested this Orange chicken Tabbouli, which I modified because I don't actually like Parsley (I replaced it with Chervil, generally going for a lighter seasoning). I was quite pleased with what I ended up with, so I thought I'd share.
Ingredients:
1/2 cup bulgar wheat
1 navel orange, sectioned
3/4 lb chicken breast (I started with strips - once it's cooked you'll want it in pieces)
1/4 C diced tomato
1/3 C diced green pepper
1/4 C diced cucumber
1 stalk celery, diced
1/2 teaspoon dried Chervil
dash garlic salt
Cook the bulgar wheat like normal, with a dash of salt. Brown the chicken until cooked through (I stir-fried it in canola oil with just a touch of margarine at the end). Mix the chopped veggies together, then add the bulgar wheat. Cut chicken into bite-size pieces and add to mix. Season. Break sections of orange into mix and toss. serve.
It made roughly 4 meal-size servings (for my serving size).
